This is a really great gluten free recipe.  To make it even healthier, play around with the sugar and substitute honey/sugar for the sugar.  If you like a more cake like texture, add 1/2 tsp baking powder to the mixture.

1 15oz can of black beans rinsed and drained
3 eggs
3 Tbsp oil
¼ cup cocoa powder
1 pinch salt
1 tsp vanilla extract
¾ cup organic sugar
1 tsp instant coffee (optional)
½ cup milk chocolate chips (optional)

Preheat oven to 350F. Lightly grease and 8×8 square pan.
Combine black beans, eggs, oil, cocoa, salt, vanilla extract, white sugar and instant coffee (if using) in a bowl in a blender and blend until smooth. Pour the mixture into prepared baking dish.
Sprinkle the chocolate chips (if using) over the top of the mixture.
Bake in the preheated oven until the top is dry and the edges have started to pull away from the sides of the pan. About 30 minutes
