This is an amazing recipe!!!  I really love it.  Soba noodles are actually buckwheat noodles and can be found at most larger grocery stores and Asian markets.  They cook really quickly and are really great for you.  Buckwheat is not actually a wheat but instead belongs to the rhubarb family, so this recipe can be gluten free (just make sure your soya sauce is gluten free or use Bragg’s).  Also, scallops can be substituted for the shrimp.


Dressing                                       Noodles and vegetables

2 Tb sesame oil                                           16 oz (500 g) soba noodles

3 tsp wasabi paste                                       4 Tb veg oil                       8 green onions sliced

6 Tb soy sauce                                            2 tsp chopped garlic          4 Tb grated ginger

6 Tb rice wine vinegar                                  ½ tsp red pepper flakes     16 oz peeled shrimp

6 Tb sake                                                     4 cups finely sliced baby bok choy or other leafy green

2 tsp sugar                                                  salt and pepper to taste (pepper fresh ground)


Garnish  –     3 Tb of black or white sesame seed toasted and 3 Tb slivered pickled ginger

  1. Whisk together dressing ingredients until smooth and set aside
  2. Cook noodles in large pot until al dente (3 – 4 min) drain and toss with 4 Tb of dressing
  3. Heat vegetable oil on high – add ginger, garlic, and red pepper – stir fry for 1 minute.  Stir in shrimp and fry for 2 more min.  Add bok choy and sauté 1 min or just until wilted.  Add green onions, stir in remaining dressing and bring to a boil and add noodles.
  4. Toss everything together and cook until noodles hot.  Season, adding more soy or salt and pepper.  Garnish with sesame and ginger.
